Caveman Sweet Potato Mash

This creamy and filling side dish will fill you up with fiber and flavor. Rich in vitamins A, C, and healthy fats, you'll serve this up on holidays and any time you need an extra energy boost from healthy carbs.

Serves 4-6

Cook time: 90 minutes

Ingredients

  • 6  large sweet potatoes or yams, peeled
  • drizzle extra-virgin olive oil
  • 1/3 cup full fat coconut milk
  • 2 tbs. butter
  • 1/4 -1/2 tsp. cinnamon
  • 1 pinch orange zest (about 1 tbs. passion orange with zester)
  • 20 drops liquid stevia
  • 1/4 tsp, white pepper

Directions

1. Preheat oven to 350° F. Stab sweet potatoes with fork and lightly coat with olive oil. Bake 45 minutes or until mushy.

2. Add all ingredients to large mixing bowl and mash thoroughly. Add stevia, salt, and pepper to taste. Serve hot.
