Roasted Herbed Pork Tenderloin

Serves 6

Cook and prep time: 1 hour + 15 minutes

Ingredients

  • 2 tbsp. ghee
  • 3 lb. pork tenderloin
  • 2 tbsp. dried tarragon
  • 1 tsp. savory
  • 2 tsp. sea salt and pepper, mixed
  • 4 dried tarragon sprigs, optional

Directions

  1. Preheat oven to 350 F/175, grease baking pan with butter or ghee and set aside.

  2. Grease shallow roasting pan with ghee, and place tenderloin in pan.

  3. In a bowl, combine seasonings and oil, then rub mixture all around the tenderloin while in the pan.

  4. Bake uncovered for about 35 minutes or until a thermometer reads 145-160 F. Then remove from oven and let sit for 10 minutes before slicing and serving.

  5. Reduce oven temperature to 350°F/175C. Bake 30 to 40 minutes more.

  6. When done, let rest for 15 minutes before slicing.

  7. Garnish with tarragon sprigs.
