Pistachio Pork Chops with Green Beans

Ingredients 

  • 1 Orange, zested and peeled 
  • 2 TBSP Ghee
  • 2 Pork Chops
  • 1⁄2 Cups shelled pistachios crushed
  • 1 lb green beans trimmed
  • 1-2 cloves garlic minced
  • Salt and pepper to taste

Directions

  1. Preheat oven to 450° F.

  2. Add peeled orange to a food processor or high-powered blender and blend a few seconds.

  3. Transfer to a small saucepan and cook over medium heat until juices begin to evaporate and mixture thickens.

  4. In a cast-iron skillet over medium-high heat, melt tablespoon ghee.

  5. Salt and pepper pork chops to taste.

  6. Brown chops on each side 6 minutes.

  7. Remove from heat and spread tablespoon orange mixture over each chop. Sprinkle with pistachios.

  8. Bake 12–16 minutes or until cooked. Remove chops from pan and rest a bit.

  9. Meanwhile, Line a baking sheet with parchment paper.

10. Toss green beans on a baking sheet with orange zest, garlic, and tablespoon ghee.

Sprinkle with salt & pepper to taste.

11. Roast 10 minutes.
12. Serve pork chops with side green beans.
